Whole 30 Roasted Veggie Power Bowl

(Via Well Plated)

This recipe is fun, simply and convenient—so basically, it can’t get any more wholesome than this. Start out by making your veggie power bowl by choosing whichever veggies you like best. This recipe uses a mix of sweet potato, broccoli, cauliflower, kale and red onion. You are going to throw all of your favorites onto a sheet pan and let them roast until they are lightly crispy and caramelized. Season to your heart’s desire—salt, pepper, or add some spice with a bit of chili powder to give your bowl some added flavor. Make (or buy) a creamy tahini dressing, and add some lean protein to your bowl by topping the dish off with a soft boiled egg.
