As is customary, every Friday we will provide you with 3 easy to prepare MS friendly recipes to try this coming weekend!

2 Ingredient Paleo Plantain Pancakes

An easy and delicious way to start your morning—all you’ll need for these breakfast treats are plantains and eggs, but if you’d like to add some moisture and give them the fluffy pancake feel, you can also add a bit of baking soda and coconut oil or ghee. Cook them as you would regular pancakes and serve with maple syrup, nuts, honey, or whatever else you enjoy putting on your pancakes! Follow the full recipe here.

Fabulous Frittata

Filling, yet healthy and light—this frittata is perfect for a quick meal, guests and the whole family. The best part about a frittata is that you can add and customize whichever veggies and proteins you like the best! This recipe recommends roasted red peppers, mild Italian sausage, heavy cream or coconut milk, chives, kale, feta cheese, salt, pepper, and of course—eggs! Mushroom Meatballs with Easy Tomato Sauce

Perfect around any time of the year—who doesn’t love a good meatball dish? You will make all of the mushroom haters in your life fall in love with this meal. Head to the store and pick up white mushrooms, ground beef, garlic cloves, Italian parsley, egg yolks, butter (or ghee), salt and pepper. For this quick and easy sauce, you will need whole canned tomatoes, basil, olive oil, salt and pepper. To keep this dish healthy, you can either eat it as is or serve it over some yummy zucchini noodles or spaghetti squash!
