Turkish-Style Red Lentil Soup

This is a very simple soup to make once you have all of the ingredients ready. Purchase a good quality red pepper paste. Look at the ingredients and make sure it only contains red peppers and some vegetables along with vinegar. It’s best to puree the soup with a hand blender and then strain the soup into a clean pot resulting in a very smooth soup.

Paleo Chicken Chow Mein

My Paleo-friendly version is kind of a mish-mash of both styles, combining the softer noodles (or in this case, sweet potato noodles) of the West Coast with some crispy bits more reminiscent of East Coast chow mein.

PB&J Energy Balls

Nope—there’s actually no peanut butter or jelly in these bite-size “PB&J” energy balls, but their nutty crunch and sweet strawberry flavor never fail to bring back fond memories of munching on my favorite after-school snack.
