Multiple Sclerosis Friendly Recipes

August 12, 2016

As is customary, every Friday we will provide you with 3 easy to prepare MS friendly recipes to try this weekend.

Paleo Huevos Rancheros

Not only is breakfast the most important meal of the day, but it is the BEST meal of the day. Try something new and healthy, like this popular Mexican dish. The staples of the dish are simple and good for you; just eggs, salsa and tortillas. Fry up some eggs, chop tomatoes, onion, cilantro and some jalapeno if you want to heat it up a bit!

Sweet Potato Toast

Forget avocado toast (even if it is delicious) and focus on the new craze, sweet potato toast. How might one make sweet potato toast, you ask? Well, start by finding larger sized sweet potatoes and slicing them about ¼ inch thick. They will be thin enough to cook through when you pop them into the toaster and thick enough to hold all of the yummy goodness you will be piling on top.
You can play around with the sweet and savory toppings you put on these toasts. For example, you can spread almond butter on top with banana slices, or you could also spread on cream cheese and smoked salmon. If you really miss avocado toast, you can go ahead and pile that on too.

Paleo Single Serve Chocolate Cake

This high-protein, fudgy sweet is perfect for when you’re craving a little after dinner treat. Using almond meal and almond butter is what makes it so high in protein. You’ll also be needing some almond milk, maple syrup, cocoa powder and baking soda. Bake for 30 minutes and enjoy your gooey and delicious dessert!
