As is customary, every Friday we will provide you with 3 easy to prepare MS friendly recipes to try this 4th of July weekend.

Red, White and Blue Fruit Salad

This 5 minute salad is super easy and not to mention a perfectly healthy way to get you into the holiday weekend spirit. This recipe calls for a mix of strawberries, blueberries, bananas and if you want a special kick you can top it with a special honey-lime drizzle. Since fruit salad is extremely versatile, have some fun with it and mix together your favorite red, white and blue fruits!

Balsamic Glazed Steak Rolls

Nothing says barbecues like a good steak, especially a lean and healthy one! You don't have to be afraid of eating red meat as long as you are choosing wisely. For this recipe you could use lean, thinly sliced sirloin steaks. Cut them into three inch wide strips then season them with some salt and pepper. As for your veggies, matchstick cut some carrots, zucchini, green onion, peppers or whatever else you wish to pair with your steak. Fill up your steak strips and get rolling. Close them up with a toothpick then lay those right onto the grill. When you’re ready to serve, top with the delicious balsamic glaze. For a healthier version of the glaze, I suggest using this one instead of the one on the original recipe.

Coconut Water Fresh Berry Popsicles

Dessert is one of the best parts about the 4th, and while you might find yourself gravitating towards the unhealthy and non-MS approved sweets, you can wow everyone (and yourself) with these delicious popsicles. Let's face it, it's hot and you're going to need something to cool you off. Just fill up a Popsicle tray with some fresh berries, fill up with coconut water and let them chill for a few hours! If you want something creamier, using coconut milk is the way to go.
