As is customary, every Friday we will provide you with 3 easy to prepare MS friendly recipes to try this weekend.

Cucumber Smoked Salmon Roll-Ups

This recipe resembles a healthy Philadelphia sushi roll, except this is fit for a snack rather than a meal. This quick recipe works great as an appetizer or a healthy little snack throughout the day. Just thinly slice cucumbers lengthwise using a mandolin, spread on some low-fat cream cheese (although this recipe calls for mayo), layer up some smoked salmon then roll those babies up and pin them together with a toothpick!

The Best Greek Skillet Ever

This dish will take you straight to a vacation on one of the Greek islands. You’ll need either chicken thighs or chicken breast, lemon juice, olive oil, onions, garlic, cherry tomatoes, artichokes, Kalamata olives, capers and of course, feta cheese. You can also buy some basic Greek seasoning at the grocery store to spice up the dish which includes ingredients like oregano and thyme. Cook the chicken and stir all the ingredients up in a skillet and there you will have yourself the best Greek skillet ever, the original recipe can be found here.

Easy Peach Sorbet

This recipe only has three, that's right, three ingredients! After peeling and freezing peaches and bananas, simply throw them into a food processor with a squirt of lime juice and process the naturally sweet ingredients together until the mixture appears smooth. The key to this refreshing summer dessert is that you have to immediately dig in and enjoy!
