Multiple Sclerosis Friendly Recipes

July 22, 2016

As is customary, every Friday we will provide you with 3 easy to prepare MS friendly recipes to try this weekend.

Brussels Sprouts Chips

If you’re totally over kale chips, I highly suggest making this (even better) snack! While these may take a bit longer to make than kale chips since you need to peel the outer layer of sprouts out for it, they’re definitely worth it. You just need to remove the leaves, toss them in olive oil and sea salt and bake them until they’re brown and crunchy!

Summer Zucchini Basil Frittata

This filling egg dish looks absolutely delicious, and who doesn’t like eggs? Mix some shredded zucchini, onion, garlic and basil in with your heaping batch of whisked eggs and bake this egged-up cake. This recipe calls for ground Italian sausage for the frittata and while it sounds lovely, something like a chicken based sausage would be a healthier option.

Paleo Frozen Banana Pops

Fruits make such a great dessert, naturally sweet and delicious yet packed with nutrients that your body will thank you for. This especially goes for everyone’s favorite yellow fruit, bananas! Bananas pair well with so many great things like smoothies, nut butters and of course, chocolate. These frozen banana pops are the perfect summer dessert. Replace regular milk chocolate for either dark chocolate or carob chips, get it melted and dip the (already) frozen bananas into the chocolate. Last but not least make sure to roll the chocolate covered end into your favorite healthy topping (I recommend coconut) then pop them back into the freezer. Read more about this fun recipe here!
