Sweet Potato & Oat Muffins

These muffins are perfect for a person on the go, but still wants a good and filling breakfast. These muffins keep that sweet muffin taste, while also giving you important daily nutrients. Be sure to use the all-important coconut oil.

  • 1 Cup Old Fashioned Oats
  • 1 Cup Whole Wheat Flour
  • 3/4 Cups Coconut Sugar
  • 1 Tbs. Baking Powder
  • 1 Tbs. Cinnamon
  • 1 Tbs. Nutmeg
  • 2 Scoops Vanilla
  • 1/2 Tbs. Whey Protein
  • Chia seeds 1 Tbs.
  • Ground Flaxseed
  • 1 Cup Mashed Sweet Potatoes
  • 1 Egg
  • 1/4 Cup Skim Milk
  • 1/3 Cup Coconut Oil
  • 2 Tbs. Vanilla Extract
  • Bake at 350 for 25 mins
