Veggie Spring Rolls and Almond Dipping Sauce (Via MS Saved My Life)

Serve as an appetizers or make a meal out of this one—these spring rolls are gluten free, dairy free and peanut free! Make sure to plan ahead and get organic brown rice wraps to start, although feel free to substitute these with either collard greens, Swiss chard, red kale leaves or organic brown rice wraps. Use whichever veggies you have or prefer to include in the wrap, this recipe calls for carrots, red pepper, cucumber, red onion, red cabbage, radish sprouts, avocado, spinach and cilantro—slice these up really thin and get to rolling! You will need 2-3 large Portobello mushrooms, arugula, prosciutto (optional), roasted tomatoes, onion, garlic, ghee, olive oil, lemon juice, spicy brown mustard and Parmesan cheese. The best part about this healthy treat (besides how good it must taste, of course) is that it can easily be made in a blender—Natalie from MS Saved My Life says she simply uses her large Ninja blender cup. What she uses in this recipe is coconut milk, organic dates, cacao powder, lemon juice and Himalayan sea salt.
